This Pink Bourbon from our friend Sebastian Ramirez’s El Placer is a total showstopper: bright, clean, and bursting with character. These cherries are plucked at peak ripeness, floated and then monitored for 30 hours during in-cherry fermentation, followed by 40 hours of fermentation after de-pulping. This specific lot was dried slowly over 22 days, a total labor of love. The result is a cup dialed to perfection with juicy, citrusy goodness, and a floral lift that has this cup practically levitating.
