Sticky Toffee comes from the Habtamu Gato washing station in the Limu zone of Ethiopia. Sitting just under 1,930 meters, this lot pulls from 109 smallholder farmers working semi-forest land, where shade and biodiversity do a lot of the heavy lifting toward a balanced, sweet profile. It’s a standard washed process done well. Cherries are hand-sorted at intake, fermented 20 to 24 hours, then dried on serially tracked raised beds for up to 12 days. The result is clean and approachable, with notes of sweet tea, tangerine, and a brightness that complements the chewy, sweet goodness.
