Sometimes you have a coffee that makes you say, “Is this even legal for a coffee to taste this wild and delicious?” That’s what happened to us when we tried Yulieth Mora’s Yeast Inoculated Ombligon. Yulieth grows a unique coffee variety called Ombligon (Spanish for bellybutton lol). The coffee is depulped and washed in barrels where a specific yeast is engaged to develop wild, fruit-forward flavors during fermentation before being dried on raised beds.
