Description
Pink Bourbon is already one of the most desired varieties in specialty coffee. Andres Martinez decided to ferment it with chamomile anyway. His farm, El Sendero is becoming more of a science laboratory than a coffee farm. Harvested ripe, the cherries go straight into a closed tank with chamomile flowers for 72 hours before de-pulping and a second, shorter fermentation. After a light wash, the coffee dries on raised beds for 10-12 days. In the cup, expect intense floral and spice with apple-like sweetness. Yum!
